Best way to handle album with mono and stereo tracks?

I'm recording Horace Silver - The Trio Sides, and it's 2 (vinyl) discs. Sides 1 & 2 are mono, side 3 has both mono and stereo tracks, and side 4 is stereo. What's the best way to handle this? Just record it all in stereo?

Yes, I would do just that.  Mixing down to mono doesn't gain you much (apart from reducing the file size).
