The latest update to VinylStudio offers more options for album art than previously. I have some albums that have already had the tracks saved before this update. Can I usefully change the album art on these items? If not, what is the latest stage at which the art should be changed?

If you import new album art for a particular album, just save your tracks again. The only reason not to do this perhaps is if you have added tags to your saved tracks outside VinylStudio. These would not survive the process.
You might need to check 'Always Save Tracks, even if Saved Before' in the confirmation dialog that is displayed when you save your tracks. I don't think VinylStudio will recognise artwork changes as a reason to re-save.
